Plantain Lazagna o Lazagna de Platano
I learn to make this recipe with my Mom!
6 ripe plantain
1/2 kilo of Ground meat
1/2 cup chopped onion
1/2 cup chopped green or red pepper
1/2 cu finely chopped celery
1/2 cu finely chopped cilantro
1 cup refried black or red beans
1 cup sheddar motzarella cheese
1 cup sour creme
tomatoe sauce
2 eggs (yolk)
4 cu parmesan cheese
Peel the plantains ( they have to be ripe) fried them and put them aside, sauted spices with the ground meat until is golden put tomate sauce .
Now put a layer of plantain, another of refried beans, another ground mear, spread the motzarella and the sour creme repeat the plantain, and spread the eggs on the top the parmesan cheese.
Baked 375 F for 20 minutes. decorate with sour creme
Tip : Better is is cook the day before

Rocio's Tropical Shrimp
Tropical Shrimp (Four people)
Ingredients
1/2 kilo Big shrimp
2 sweet pineaples with their leaves
1 sweet ripe mango or 1/2 cup pineaple cut in litle pieces
1 spoon de cilantro well chopped
1/2 red onion sliced cut very thin
1 spoon coconut
2 sweet orange juices
1/2 ketchup
1 cu Olive oil
1/4 red pepper cut very thin
2 cu sugar
Pepper
Lean and cut the shrimp in half, in hot water put the shrimp until they are red, 30 seconds , pass them under cold water and put them in the freezer in a bag or tank for 20 minutes.
Pineapple cut in half then half, then carved in the center cover put in place in the freezer.
Then the mixture of tomato sauce, orange juice, red onion, cilantro, olive oil, pepper, sugar and let stand. and stores it in a bag.
When ready to serve and placed in a deep deposit red onion, pineapple in diced. shrimp, and prepared sauce, gently stir all ingredients, pu them in the pineaples garnish with cilantro, grated coconut, pineapple leaves and small umbrellas
